MMDM has been shaping the F&B experience for major hospitality brands like Hyatt and Margaritaville. From developing over 300 Hyatt Place and House properties to crafting innovative dining concepts for emerging Hyatt Caption and Select brands, MMDM continues to set the standard. As the exclusive consultant for all Margaritaville properties—including resorts, Compass Hotels, Camp Margaritaville, and 55+ Latitudes communities—they’ve led the design of 35+ unique F&B venues nationwide. Notable projects also include Louisville’s boutique Hotel Genevieve and NYC’s Park Ave Kitchen by Chef David Burke, showcasing MMDM’s range and creativity in foodservice design.
Hyatt Hotels
Hyatt Place, Hyatt House, Hyatt Caption and Hyatt Select
MMDM is the consultant of record for all the above Hyatt Hotel concepts. Brian developed the prototype layouts and has been the consultant for 300+ of the HP and HH hotels built over the last 20+ years. The Hyatt Caption and Hyatt Select are new concepts and MMDM has worked with Hyatt corporate design and F&B to help develop the foodservice areas for these concepts.
Margaritaville Hotels and Resorts
We are the consultant for the incredibly popular Margaritaville brand and all of their 35+ F&B concepts.
A few recent projects:
Margaritaville @ The Wharf – Orange Beach, Al. 8 foodservice concepts in southern Alabama’s most popular beach area. Construction begins in 2025.
Margaritaville Beach Resort - Fort Myers Beach, Fl. 11 foodservice concepts in this sprawling resort located right on wonderful Ft. Meyers Beach in southwest Florida.
Margaritaville Hotel – Kansas City, MO. 6 foodservice concepts in the heartland of the US. This property has numerous F&B outlets with an emphasis on weddings and events. Opening in the Spring of 2025.
Margaritaville Lake Tahoe Resort – 6 foodservice concepts in this all-suites resort in South Lake Tahoe, CA.
Latitudes Margaritaville Adult Living Communities– Currently there are 3 of these amazing 55+ communities located is Florida and South Carolina with numerous more planned across the country. They all have a full-service restaurant, large bars, movie theatres and live music venues.
Camp Margaritaville – Numerous RV Parks with full-service restaurants and bars. This is a growing segment of the Margaritaville brand.
Compass Hotel by Margaritaville – Upscale, boutique Margaritaville branded hotels with a heavy emphasis on F&B offerings. Bian helped develop the prototype for this concept. There are currently 5 properties opened and we have 3 under design.

Bunkhouse Hotels first venture out of Texas. A gorgeous boutique hotel with a strong F&B presence in downtown Louisville.
